Cookies are tiny text files, which are downloaded to your computer when you visit almost any website. Websites use them to perform certain functions (e.g. serve you the right country version of the site), to enhance the user experience (e.g. to remember your preferences), for reporting purposes (e.g. analytics) and for advertising purposes.
